Pineapple Mint Frappe
A refreshing, non-alcoholic drink to reward yourself after a long day in the garden or an invigorating walk. It’s a good source of Vitamin C, contains no added sugar and has less total sugar than ½ a glass of regular cordial.
Serves 3
Ingredients
1 cup diced pineapple (fresh or canned without juice)
½ cup chopped mint
1 cup coconut water
1 cup ice
Stevia and Lime wedge to garnish
Directions
1. Add the diced pineapple, mint, coconut water and ice in a blender and pulse to combine.
2. Wet the outside rim of the glass with a wedge of lime and place upside down on a plate of stevia. Twist the glass to coat.
3. Garnish with a pineapple plant leaf or wedge of pineapple.
